here's my interpretation of a restaurant favorite...corn salad, a quick and delicious snack for a hot summer day. you can add in feta cheese, avocado or whatever else you're craving at the moment.
ingredients:
1 cup cherry tomatoes, cut
1 cucumber, diced
5 ears fresh corn, shucked, or about 4 cups corn kernels
1/4 cup diced red onion
1/4 cup olive oil
3 tablespoons red wine vinegar
salt and pepper
directions
- mix all ingredients in a large bowl with olive oil and red wine vinegar
- add salt and pepper to taste
i prefer to cool the salad in the refrigerator for a few hours before serving, but it can be eaten either way.
